King George Whiting: grilled fillet with Carid prawns, sherry, romesco and garlic chives

Goats curd: roast and pickled cauliflower with toasted sesame and lemon*

Smoked kingfish: house smoked with fennel, yogurt and toasted grains

Chicken: poached corn fed breast with parfait, pickled celery and farro

Pork belly: grilled pork belly with pear chutney, mustard and crackling

Eggplant: smoked eggplant with grapes, walnut and rocket*

Barramundi: roast fillet with golden beetroot, radish and nori butter

King salmon: pan fried fillet with red cabbage, Gala apple and horseradish

Duck: roast breast with beetroot, rhubarb and gingerbread

Beef: roast fillet with glazed shallots, pommes purée, sautéed mushrooms and red wine jus

Stone fruit: peach ice cream with caramelised white chocolate, honeycomb and nectarines

Honey cake: honey cake with toasted rice sorbet and lavender

Parfait: raspberry parfait with coconut sorbet

Cheese: a selection of Australian and international cheese
